How to Make Jollof Rice
Ingredients:
2 cups of rice
4 large tomatoes (or 1 cup tomato paste)
2 red bell peppers
1 onion (chopped)
2 cups chicken or beef stock
1 teaspoon thyme
1 teaspoon curry powder
1 teaspoon paprika (optional)
1 teaspoon salt (to taste)
1 teaspoon seasoning cubes/powder
1 teaspoon ground pepper
½ cup vegetable oil
2 cloves garlic (minced)
1 teaspoon ginger (grated)
Steps:
1. Blend Tomatoes & Peppers: Blend tomatoes, red bell peppers, and half of the onion into a smooth paste.
2. Cook the Sauce: Heat oil in a pot, sauté chopped onions, garlic, and ginger. Add the blended mix and cook until the oil separates.
3. Add Seasoning: Add thyme, curry powder, paprika, seasoning cubes, salt, and pepper. Stir well.
4. Add Stock & Rice: Pour in the stock, bring to a boil, then add washed rice. Stir well, cover with a tight lid or foil to trap steam.
5. Cook on Low Heat: Reduce heat and let it simmer for 25-30 minutes. Stir occasionally to prevent burning.
6. Final Touch: When the rice is soft and the liquid is absorbed, fluff with a fork. Cover and let it steam for a few more minutes.
7. Serve: Enjoy with fried plantains, chicken, or salad
