You ate Moi Moi in a party, you loved it, but you don't know how the chef was able to achieve such soft, succulent, fluffy, buttery, colourful and flavourful Moi Moi.

Come closer.....let me give you the secret recipe and technique🤫

Ingredients:

• 2 Cups Beans
• 200ml water to blend
• 3 Tatashe
• 3 Scotch Bonnet (add more if you like spicy food)
• 4 Shombo
• 2-3 Red Onions
• 2 Tablespoons of Crayfish Powder
• 1/2 cup of Vegetable oil
• 1 Teaspoon of Salt
• Chicken/Beef Stock 150ml (hot)
• 2 Seasoning cubes (add more if your stock is not well seasoned)
• 1 Deboned Smoked Mackerel
• 3 Boiled Eggs
• 2 Raw eggs
• 1½ teaspoon of Nut meg
• ¼ cup of ginger extract.

Directions for preparation:

1. Soak the beans for 5-7 minutes. Remove the skin of the beans either by rubbing with your palms, using a mortar or a blender. After removing the skin, rinse with water and run through a sieve, do this till you get all the skin out of the beans and you are left with clean white beans.

2. Next, prep your ingredients, remove the seeds from the peppers so that the moi moi won't be bitter after preparation, debone and shred the mackerel into smaller pieces and do other prepings.

3. In a blender, add the washed beans, peppers, onions, and raw eggs. Add water and blend till smooth. You can blend in batches so that you will get a completely smooth consistency.

4. Pour out the blended beans into a bowl. Bring out your hot chicken, beef or fish stock, put all the seasoning inside it (seasoning cubes, salt, nut meg and ginger extract.) mix very well before pouring it into the blended beans. Add the crayfish powder too and stir with a turning stick or spatula.

4. Next, go in with your oil, mix well. Add the mackerel fish and mix again then set aside.

5. Remove the boiled eggs from their shells, cut them into desired shapes and sizes then set aside.

6. Using banana leaves for this recipe is the best but you can also use foil, small plates, tin containers or nylon. Use any of the above to share your Moi Moi batter into portions.

8. In a pot of boiling water, place your portioned Moi Moi batter one at a time. After putting all of them in the water, cover and allow to cook till it is well done. This should take about 15-30 minutes.

9. When the Moi Moi is ready, serve and enjoy.

You can pair Moi Moi with Jollof rice, pap and even bread.

Useful Tips:
1. Use those tiny white beans, they are soft, easier to work with and they taste amazing in Moi Moi.
2. You can use melted butter in place of vegetable oil, everything tastes better with butter😁
3. Stir the blended beans mixture with turning stick in a circler motion continuously. According to our mothers, it will make the mixture rise.
4. For the best result, use banana leaves and thank me later.
5. Make sure your blended beans is not to thick or thin, it should have a smooth medium consistency. If it's too thick, it won't be fluffy, if it's too thin, it won't form..
